Beer has long been used as an ingredient in
baking as its acidic nature allows it to react perfectly with dry ingredients
such as sugar, yeast and baking powder. Here at Belgique, we think that when
adding beer to a favourite dish nothing adds taste and aroma like a hand pulled
Belgian tipple.
Deep, Rich and Devastatingly Devilish!
As beer is closely related to bread, its
flavour gives any dish those deep sumptuous notes that are hard to replicate.
Fuller than the average stock its complex combination of hops and fruit allow
it to permeate through the whole dish bringing a home cooked rustic feel to any
plate. Delicious when paired with cheese or meat, beer is also perfect for
another of our guilty sins- chocolate.

Belgian Beer is Best
When we looked a little closer we found
that Belgian beer was almost made with our baking experimentation in mind, as
some have honeyed notes of coriander and lemon (perfect for pork) whilst others
omit a strong yeasty taste that makes them ideal for loaves. The fruity Belgian
beers are ideal for adding to chocolate mousses and cakes and the best bit is a
little goes a long way!

Our Favourite
Those of you who already adore Belgian
cuisine will be familiar with the carbonnade a la flamande that is similar to a
British stew. Braising onions until sticky, brown and sweet, bacon is added
along with brown sugar with beer as the stock. Served with some grilled cheese
topped bread this is the ideal warming dish for those watching the late night
Olympic games however we fear the smell may distract Team GB as they race for
the side-lines rather than the finish line!
Basically anyone can experiment with
Belgian beer in bakery, simply replace stock with the good stuff, or add
instead of milk in cakes. A beer batter is the perfect place to start mixing
flour; beer and baking soda dip anything from fish to fruit into the mix before
